Take your PB & J sandwich to the next level and make it an PB & J Ice Cream Sandwich with this easy to follow recipe.To compliment’s the Peanut Butter and Jelly Ice Cream recipe in this post we’ll be making Ice Cream Sandwich Cookies and then we’ll take it a step forward and cover it in melted dark chocolate and crushed peanuts. The classic PB & J Sandwich is a great snack and breakfast, the combination of peanut butter and jelly goes so well together. Something about the little salty with the sweet and fruity makes it so good. And if you’re a fan of the classic sandwich you should definitely give this PB & J Ice Cream sandwich a try and if you like ice cream, that is even more of a reason to try this recipe. You won’t need many ingredients and you can make it fairly quick. I hope you enjoy it!

Ingredients

  • ¼ cup Butter
  • ½ cup Brown Sugar
  • 1 pc Egg
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 1 cup Flour
  • ¾ cup Dark Chocolate, melted
  • ½ cup Peanuts, crushed
Instructions

In a mixer, using the paddle attachment, cream the butter and sugar together until it is fluffy and light in color.
Add the egg and fully mix it in.
Add the baking soda, salt and flour and mix it only until it is all combined.
Use a baking scoop to scoop out even amounts of cookie dough. Roll the dough into balls and then place it on a baking tray with parchment paper.
Flatten out the cookies a little with the palm of your hand until they have about half inch thickness.
Pre heat the oven to 180°C/350°F and bake it for 6mins.
Allow the cookies to cool down in a rolling rack. In the meantime, melt the dark chocolate over a bain marie.
Once the cookies are fully cooled down, scoop the PB&J Ice Cream (https://www.youtube.com/watch?v=X-IDwoqAqDQ) on the bottom of one cookie and then place another cookie on top.
When you have the ice cream sandwich shaped, dip it in the melted dark chocolate and fully cover half of it, then sprinkle the crushed peanuts on the chocolate.
Place it in the freezer to let it set and then take it out when you want to eat it.
Tips
  • Once you add the dry ingredients, don't over mix the dough.
  • Make sure the cookies have fully cooled down before assembling the ice cream sandwich.
  • The cookies will still be a little soft after baking for 6mins, that is ok. Once they cool down, they'll harden a little.
