Looking for a quick and healthy snack? This recipe is for you!


These trail mix bites are beyond delicious and super easy to whip up. I love making a batch to take with us on road trips or for snacks during the week. They keep really well in an airtight container for about a week in the fridge so a big batch will keep you and your family going!


This recipe is super versatile so feel free to switch up the peanut butter for any other nut butter (almond, pecan) and chocolate chips for dark chocolate nubs, Smarties or white chocolate chips! YUM!

Ingredients

  • - 1 cup rolled oats
  • - 1/2 cup nut butter (I used natural smooth peanut butter)
  • - 1/4 cup unsweetened flaked coconut
  • - 1/4 flax seed
  • - 1/4 cup each; chopped unsalted peanuts, raisins & chocolate morsels (chocolate chips, Smarties etc)
  • - 1 Tbsp honey
Instructions

Place all ingredients in large mixing bowl. Combine together with a mixing spoon until well mixed. All of the add ins should be combined with the oats and nut butter.
Cover mixture and place in the fridge for around 20 minutes until it firms up.
With an ice cream scoop, make bite sized balls one at a time. Roll together with your hands until they form desired shape.
Store in an air tight container in the fridge for up to 1 week.
Tips
  • Depending on the consistency of your nut butter, you may need an additional 1/4 - 1/2 cup. Start with the amount in the recipe and add more as needed.
