Honey Trail Mix Bars

When it comes to cereal, I prefer the healthier, less sugary kind. So when I buy toasted oat cereal I usually get the plain and simple original Cheerios. I don’t think I’ve ever made a recipe with Cheerios before, but I came across a trail mix bar recipe that included Cheerios as one of the ingredients and it sounded so good! The original recipe calls for light corn syrup, which I rarely use and didn’t have on hand, so I used honey instead, and I really liked the result!

These bars are basically a mix of Cheerios, trail mix, some butter, brown sugar, and honey. They’re so easy to make and the brown sugar/honey coating gives them a great taste! As far as texture, these trail mix bars are a little more chewy then crunchy. If you refrigerate them, they’ll get more crunchy but they’ll still have some chewiness to them. These make a great quick, light breakfast or snack any time of the day!

Ingredients

  • 4 cups original Cheerios™ cereal
  • 3 cups trail mix that has seeds, nuts, and dried fruits (I used a trail mix that had dried cranberries, sunflower kernels, raisins, and almonds)
  • 1/4 cup (1/2 stick) butter
  • 1 cup packed brown sugar
  • 2 Tablespoons all-purpose unbleached flour
  • 1/2 cup honey
Instructions

Line a 13×9″ pan with parchment paper (or grease with butter or cooking spray).
In a large bowl, mix cereal and trial mix; set aside.
In 2-quart saucepan, melt butter over medium heat. Stir in the brown sugar, flour, and honey.
Cook, stirring occasionally, until mixture comes to a full boil. Boil 1 minute, stirring constantly.
Pour sugar/flour/honey mixture evenly over cereal mixture and toss to coat.
Working quickly, press mixture in pan. Cool completely, about 30 minutes.
Cut into bars.
