Chocolate-Banana Breakfast Cookies. Yup. I said BREAKFAST cookies! These no-bake delights are packed with nutrients and flavor. Perfect for breakfast or a grab-and-go snack. I have a major sweet tooth so having healthy, sweet snacks readily available is a must to keep me from indulging in white sugar. My recipe calls for old-fashioned oats which means the oats will soften up the longer the cookies sit in the fridge. You can use quick oats as well. These are dairy-free, gluten-free, vegan and can be nut-free if you use sunflower butter. The best part, they are easy enough for your kiddos to make on their own!

Ingredients

  • ½ ripe banana
  • 2 ½ tablespoons nut butter
  • 2 teaspoons maple syrup
  • 1 cup old-fashioned oats (use gluten-free if needed)
  • 1 ½ teaspoons cocoa powder
  • 1 ½ teaspoons chocolate protein powder
  • 1 ½ teaspoons hemp seeds
  • 1 ½ teaspoons chia seeds
  • Pinch of sea salt
Instructions

In a large bowl, mash the banana with the back of a fork. Add in the remaining ingredients, mixing well with the fork.
Scoop out about 1 tablespoon of the dough and roll into balls. Flatten into a cookie shape. Repeat with remaining dough. Store in fridge for up to 5 days.

    Hi, I am wondering if there is something can substitute for the protein powder? Also, I was wondering how well this breakfast cookie will freeze?

      You can sub it with peanut butter powder or collagen powder or you can even leave it out. Yes, these freeze really well!
