There’s just something so summery about lemon desserts. Of course they are delicious any time, but for some reason they seem extra appropriate when it's hot out. Giant lemon white chocolate chip cookies are no exception. White chocolate compliments lemon so nicely, making these the perfect combination of sweet and sour. These are dangerously simple thanks to the lemon instant pudding mix. If you haven't tried pudding mix cookies, you need to run, not walk, to the store. Seriously. I have made many different combinations of pudding mix cookies over the years, but i think this one may just be my favorite.

When these cookies first come out of the oven they will be incredibly soft, and you won't be able to handle them immediately. They will firm up once they finish cooling, if they last that long.

Ingredients

  • 2 1/4 cups flour
  • 1 tsp baking soda
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1 cup granulated sugar
  • 1 package lemon instant pudding mix
  • 2 eggs, slightly beaten
  • 1 cup white chocolate chips
Instructions

Preheat oven to 350F
In a medium bowl stir together flour, baking soda, and salt.
In a large bowl, cream together butter and sugar until light and fluffy about 2-3 minutes
Beat in pudding mix, followed by eggs.
Add in flour mixture in 3-1 small additions and stir until fully combined
Stir in white chocolate chips
Using an ice cream scoop, drop cookie dough onto parchment lined cookie sheet about 2 inches apart
Bake in preheated oven 12-14 minutes, or until cookies are just starting to turn golden and center is set.
Cool on the pan for 4-5 minutes, until cool enough to handle, then transfer to a wire rack
