Here are three recipes that turn a plain box of cake mix into moist, delicious cookies.

Ingredients
Cinnamon Bun Cookies
  • For the Cookie Dough
  • 1 Box Yellow cake mix
  • 1 1/2 tsp cinnamon
  • 1/2 cup vegetable oil
  • 2 eggs
  • For the Cinnamon Topping
  • 1/4 cup butter, melted
  • 6 tablespoons packed brown sugar
  • 1 1/2 teaspoons ground cinnamon
Peanut Butter Chocolate Bars
  • 1 box yellow cake mix
  • 1 cup peanut butter
  • ½ cup water
  • 1 large egg
  • Frosting
  • ½ cup margarine softened, 1 stick
  • ¼ cup milk
  • 2 teaspoons vanilla (1-2 depending on your taste)
  • 3 Tablespoons cocoa powder
  • 3 cups powdered sugar
Red Velvet Sandwich Cookies
  • 1 cake box mix (the dry mix only, don’t add any of the ingredients listed on the box)
  • 1 stick melted butter
  • 2 eggs
  • Frosting:
  • 1 pkg. (8 oz.) Cream Cheese, softened 
  • 1/4 cup butter or margarine, softened 
  • 1 tsp. vanilla 
  • 1 pkg. (16 oz.) powdered sugar (about 4 cups)
Instructions
Cinnamon Bun Cookies
Preheat oven to 350 degrees.
Mix all ingredients for the cinnamon topping until combined. The longer the mixture sets, the thicker it will become which is what you want.
While the cinnamon topping thickens, mix all ingredients for the cookie dough together.
Cookie dough balls should be an inch or so in size.
Place on an ungreased cookie sheet and bake for 12 to 15 mins or until slightly browning around the edges.
Let set on pan for 2 mins then remove to a wire rack for cooling.
Place your thickened cinnamon topping in a plastic baggie and a snip a small piece out of the corner. Now pipe your cinnamon filling onto the cookies.

Peanut Butter Chocolate Bars
Heat the oven to 350°F.
Spray a 13 X 9-inch pan with no-stick cooking spray.
In a medium bowl combine 1 cup of peanut butter, water and egg in large bowl, stirring until smooth.
Stir in cake mix until blended well. Spread into prepared pan.
BAKE 20 to 25 minutes or until puffed and light golden brown. Cool completely.
Frosting: Mix all ingredients with a hand mixer until smooth. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.
Red Velvet Sandwich Cookies
Add the cake mix, butter, and eggs to a mixing bowl. Stir until they come together to form a dough.
Drop the dough in rounded tablespoons onto a greased or lined baking sheet.
Press flat with a rubber scraper
Bake the cookies for 8-10 minutes at 350°F.
Allow them to cool on the baking sheet for about 5 minutes. Then transfer them to a cooling rack to cool completely.
Frosting: Beat cream cheese, butter and vanilla in large bowl with mixer until blended. 
Add sugar gradually, beating after each addition until blended.
Once cool, frost one cookie then place another on top to form a sandwich.
