Christmas Pudding Brownie Bites

Chocolate covered brownie truffles that look like Christmas pudding are the perfect addition to your cookie tray!

Good morning friends, how was your weekend? Mine was great, it was a rainy, cold weekend so I stayed inside and read, rested and recuperated. I am feeling a lot better and should be my old self in a few days. I am looking forward to Christmas week, it will be different but not less of Christmas. We will continue with all of our favorite family traditions and a few new ones as well. I just wish it would be a white Christmas, that always makes it special.


I wanted to share a really easy dessert with you today, Christmas Pudding Brownie Bites, fudgy brownies rolled into balls, dipped into dark chocolate and drizzled with white chocolate and topped with a red plain M & M.


You can make your own brownies, or make them from a box, then use melting wafers, or your favorite chocolate to dip them in.


I think these little fudgy bites are so cute and they are delicious! Add them to your Christmas cookie tray.

Brownie Cut-outs and Brownie Bites


Ingredients


2 sticks unsalted butter


2/12 cups packed brown sugar


6 oz. unsweetened chocolate


4 large eggs


2 teaspoons vanilla extract


2 cups flour


1/2 teaspoon salt


Ghiradelli Melting Wafers to cover


Red Plain M & M


Preheat the oven to 325. Line a 9×13″ pan with foil, spray with cooking spray and set aside.


In a large microwave safe bowl, combine the butter, brown sugar and the chocolate, microwave on high for 1 minute, then stir. If the chocolate is not softened continue to microwave it at 10 second intervals, remove the bowl before the chocolate is completely melted.


Beat the eggs and vanilla into the chocolate mixture, then mix in the flour and the salt. Do not over-mix. Pour the batter into the prepared pan and smooth the top. Bake for 30-40 minutes, brownies are done when a toothpick inserted into the center comes out almost clean, you want there to be a few “crumbs” on the toothpick.


Two Options:


Option 1:


Once the brownies cool you can cut them into shapes with cookie cutters and then drizzle the tops with chocolate. Take the scraps and roll them into balls, dip into dark chocolate, then decorate with white chocolate and decorate with a red M & M’s and enjoy.


Option 2:


Scoop out balls from the brownies and roll into balls. Dip balls into melted chocolate, let set, then drizzle with the white chocolate and decorate with a red M & M.


Tips: You can use a boxed brownie mix as well or use your own recipe.
