These Pumpkin Chocolate Chip Oat Bars are layered with a sweet oat crumble, creamy pumpkin, and topped with chocolate chips. A delicious blend of fall goodness that everyone will enjoy!

Mix the butter, brown sugar, flour,oats, baking soda and salt and press two thirds of the mixture into the bottom of a greased 9x13 baking dish.

Set the remaining oat mixture aside.


Mix the milk, cinnamon, ginger, pumpkin, and eggs in a bowl. Pour over the bottom oat layer.

Ingredients

  • 3/4 cup butter, softened
  • 1 cup brown sugar
  • 1 cup flour
  • 2 cup rolled oats
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 14 oz can sweetened condensed milk
  • 1 tbsp cinnamon
  • 1 tsp ginger
  • 15 oz can pumpkin puree
  • 2 eggs
  • 1 cup semi-sweet chocolate chips
Instructions

Freezing Instructions
Prepare as directed above and allow to cool for 2 hours. Either Wrap tightly and Freeze in the pan or Cut into bars. Wrap individually with plastic wrap and then with aluminum foil. Reheat in microwave prior to serving.
