Introducing a decadent twist on a childhood favorite: Millionaire Rice Krispie Cakes! Elevating the classic treat with layers of gooey caramel and velvety chocolate, these indulgent squares are a true delight for the senses. The crispy base provides a satisfying crunch, while the rich caramel layer adds a creamy, buttery sweetness. Finally, a luscious chocolate topping crowns this masterpiece, creating a harmonious blend of flavors and textures. Perfect for special occasions or whenever you crave a touch of luxury in your treats. Personally I think the Rice Krispies make such a nice change from the shortbread of the traditional variety, and make the whole thing feel a bit lighter!

Recipe details
Ingredients
- For the Rice Krispie Base:
- 4 cups Rice Krispies cereal
- 1/4 cup unsalted butter
- 1 package (about 10 oz) marshmallows
- For the Caramel Layer:
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 cup sweetened condensed milk
- For the Chocolate Topping:
- 6 oz semi-sweet or dark chocolate, chopped
- 2 tablespoons unsalted butter
Instructions
- 1. Prepare the Rice Krispie Base:
- Grease a 9x13 inch baking dish or line it with parchment paper.
- In a large saucepan, melt the 1/4 cup of butter over low heat. Add the marshmallows and stir until completely melted and well combined.
- Remove the saucepan from heat and quickly stir in the Rice Krispies cereal until they are evenly coated with the marshmallow mixture.
- Transfer the mixture to the prepared baking dish and press it down firmly using a spatula or your hands.
- 2. Make the Caramel Layer:
- In a medium saucepan, melt the 1/2 cup of butter over medium heat. Add the sugar, sweetened condensed milk. Stir continuously until the mixture is smooth.
- Bring it to a gentle boil, then reduce the heat and let it simmer for about 5-7 minutes, stirring constantly, until it thickens and turns a golden caramel color.
- Pour the caramel evenly over the Rice Krispie base and spread it out using a spatula. Allow it to cool and set for about 30-45 minutes.
- 3. Prepare the Chocolate Topping:
- In a microwave-safe bowl, combine the chopped chocolate and 2 tablespoons of butter. Microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth.
- Pour the melted chocolate over the caramel layer and spread it out evenly.
- 4. Allow to Set:
- Allow the entire dish to cool and set for at least 2 hours at room temperature, or in the refrigerator for faster setting.
- 5. Cut and Serve:
- Once fully set, use a sharp knife to cut the millionaire rice crispy cakes into squares or rectangles.
- 6. Optional Garnish:
- You can optionally sprinkle a pinch of sea salt over the chocolate layer for a nice contrast to the sweetness.
