Lygdda’s Lemon Bars🍋

I love love lemons, this is why I decided to make this recipe. I enjoyed making this easy recipe because I am not very good at making desserts. I know for sure you will find it easy to make too. I’ve seen many different lemon bar recipes, so I made this one with my own touch. I don’t like sugar as much so I did add the juice of 1 lemon, but my original recipe calls for 2 tbs. It comes out delicious, and not that sweet. Hope you enjoy my recipe.


Ingredients


Shortbread Crust:

1 cup all-purpose flour

1/2 cup butter, softened

1/4 cup confectioners' sugar


Filling:

3 large eggs, room temperature

1 cup sugar

2 tablespoons all-purpose flour

1/2 teaspoon baking powder

1/2 tsp vanilla extract

1/8 tsp salt

2 tablespoons lemon juice

1 teaspoon grated lemon zest

confectioners' sugar to dust on Lemon Bars


Shortbread Crust: In a bowl, combine the flour, butter, and confectioners' sugar. Pat in shortbread crust into an ungreased 8-in. square baking pan (dust flour on your hands to avoid the batter from sticking to your hands). Bake at 350° for 20 minutes.

Filling

In a small bowl, beat eggs. Add the sugar, flour, baking powder, vanilla extract, lemon juice, zest, and salt, and beat until foamy.

Once the crust is done add the filling. Bake for 25 minutes longer or until light golden brown. Cool and dust with confectioners' sugar and cut into bars.

Beat until foamy

Bake for 25 minutes
