‘Tis the season for all of the Christmas cookie recipes! This is by far my favorite time of the year for many different reasons. One of my favorite parts about the Christmas season is how so many little things during this time bring us joy. Setting up the tree, wrapping presents, the Christmas lights, and the baking of course! I have a specific gingerbread cookie recipe that I make every year and it’s always a favorite. This year I decided to make gingerbread cookie bars instead! And to make them even better, I browned the butter. So fun to make!

Ingredients

  • 1 stick of butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/4 cup molasses
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
  • 1 tsp baking soda
  • 2 cups flour
  • 2 Tbsp cinnamon sugar
  • 1/2 package of vanilla almond bark
  • Christmas sprinkles
Instructions

Preheat oven to 350°.
In a saucepan on medium heat, melt butter.
Once melted, stir constantly until the butter is golden brown.
In a large bowl, combine the sugars and the brown butter.
Mix in the vanilla, egg, and molasses.
Add the cinnamon, ginger, nutmeg, cloves, and baking soda. Slowly stir in the flour.
Press dough into a greased 9x13 sheet pan (or parchment paper lined).
Sprinkle cinnamon sugar over the bars.
Bake for 15-18 min or until the top is golden brown and crinkly.
Once cooled, melt the almond bark and drizzle over the bars.
Top with Christmas sprinkles!
