Lo-Carb, Bite-Size Cups

It seems to me that every time you turn around, there's a new way to eat, or not to eat is more like it, but cutting out carbs has always been a way to eat healthier. Below are three really simple recipes for bite-size, lo-carb, easy to eat cups featuring foods we all love - pizza, tacos, and eggs!

Ingredients
Ingredients for Pizza Cups
  • 1 package sliced pepperoni
  • 1 package mini fresh mozzarella balls
  • marinara sauce
  • fresh thyme
Ingredients for Taco Cups
  • 2 cups shredded cheddar cheese
  • 1 small onion
  • 1 pound ground beef
  • Taco seasoning
  • Ranch Dressing or sour cream
  • 1avocado
  • 1 small tomato
Ingredients for Broccoli Cheese Egg Cups
  • 3 large eggs
  • 1 cup finely shredded cheddar cheese
  • 1 cup broccoli
  • Salt and pepper to taste
Instructions
Instructions for Pizza Cups
Preheat oven to 400 degrees
Press three pieces of pepperoni into a mini muffin tin; placing the pieces around the inside of each muffin cup, slightly overlapping.
Bake 6 minutes until pepperoni is cooked but not brown.
Remove from oven
Add a tablespoon on marinara to each cup
Add one mozzarella ball to each cup
Top with thyme
Place back in oven and bake an additional 5 minutes until cheese is melted.
Let cool before eating.
Instructions for Taco Cups
Preheat oven to 350 degrees
Line a baking sheet with parchment paper
Spoon 2 tablespoons of cheddar cheese onto the baking sheet, keeping each mound a few inches apart
Bake cheese 6 minutes until golden
Let cool on baking sheet
Spray muffin tin with cooking spray
Place cooled, melted cheese into each muffin cup forming it to the cup
Place a second muffin tin on top (to push and hold the cups into place) and let stand 10 minutes
Chop onion into small pieces
In a skillet, add chopped onion and cook until transparent
Add ground beef and cook until no longer pink
Drain
Add taco seasoning according to package directions
Chop avocado into small pieces
Chop tomato into small pieces
Remove second muffin tin from cheese cups
Add a tablespoon of hamburger mixture
Add tomatoes, avocado and top with Ranch or sour cream
Instructions for Broccoli Cheese Egg Cups
Preheat oven to 350 degrees
Whip three eggs in a bowl
Add salt and pepper to eggs
Finely chop broccoli
Pour eggs into each muffin cup, filling 1/3 full
Add broccoli and cheese to each cup
Bake for 6 minutes until golden brown on top
Tips
  • You can also increase the amount of ingredients and make each of these recipes in regular size muffin tins.
  • The ingredients for the pizza cups and egg cups can be endless.
  • The egg cups can be frozen to eat at a later date.
