A chocolate Jar cake recipe that is quick, easy, and delicious. Recently I baked a chocolate cake for some occasions and the next day I have some leftover chocolate cake and strawberries in the refrigerator. So then I realised why not to prepared a quick chocolate Jar cake with strawberry glaze. This one bite of moist chocolate cake with chocolate whipping cream, fresh strawberry glaze and garnished with some grated chocolate tastes extremely delish all together. I have sent few jar cakes for my elder sister family & she said that this was the best chocolate Jar cake they’d ever tasted.

Ingredients
For Chocolate Cake
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 Tsp baking powder
  • 1/2 Tsp baking soda
  • 1/2 Tsp vanilla extract
  • 1/2 Tsp espresso powder 
  • 1/2 cup milk or Buttermilk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/4 Tsp salt
  • 1/2 cup water
For Chocolate Whipped Cream
  • 2 cups heavy whipping cream - chilled
  • 1/4 cup unsweetened and sifted Cocoa Powder
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
For Strawberry Glaze
  • 15 Strawberries, rinsed and thickly sliced
  • 1/3 cup granulated sugar
  • 1 Tbsp lemon juice
For Jar Assembly
  • Chocolate cake
  • Chocolate whipping cream
  • Strawberry Glaze
  • Jars/ Glasses
Instructions
For Chocolate Cake
Preheat oven to 350º F. Prepare cake pans by spraying with baking spray.
Add flour, sugar, cocoa, baking powder, baking soda, salt and espresso powder to the bowl of a stand mixer.
Whisk through to combine flour mixture until combined well.
Add milk, vegetable oil, eggs, and vanilla to flour mixture and mix together on medium speed until well combined.
Reduce speed and carefully add water to the cake batter until well combined.
Pour cake batter evenly in the cake pan.
Bake for 30-35 minutes, until a toothpick inserted in the center of the chocolate cake comes out clean.
Remove from the oven and allow to cool down completely.
For Chocolate Whipped Cream
In a medium bowl, combine all of the ingredients. Using a standing mixer with a whisk attachment, whip on medium until stiff peaks. This will take 4-5 minutes.
Keep the whipped cream in the refrigerator until ready to serve.
For Strawberry Glaze
In a saucepan, combine sliced strawberries, sugar and fresh lemon juice.
Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally.
The strawberries will start to release juice then reduce heat and cook until sauce is thickened, stirring occasionally.
Once strawberry Glaze thickened then allow to cool at room temperature.
For Jar Assembly
Using a circle cutter, cut out circles of cake from the chocolate cake.
Press a circle of cake onto the bottom of the jar/glass.
For the second layer pipe out whipping cream.
For the third layer drop a heaped tablespoon of strawberry Glaze and level it with a spoon.
Repeat the 3 layers & finally top with some generous amount of grated chocolate.
Then chill the cake jar for at least 1 to 2 hours for the flavours to infuse.
Tips
  • Instead of milk, buttermilk can be used to make chocolate Cake.
  • You don't want to over whip the cream, So once the stiff peaks start to form, the whipped cream is ready.
  • Make sure your whipping cream is very cold when making whipped cream.
  • You can also chill your bowl and mixer tools.
  • This strawberry Glaze taste delicious over ice cream, pancakes & cheesecake as well.
  • Different size jars or glasses may alter the portions size.
  • Adjust the number of cake circular cutouts accordingly.
