I love everything about fall, in fact it’s my most favorite season. The colors, the smells, the cool weather, the sweaters, the boots, the foods… I mean really, the list just goes on and on! Growing up in the Chicago area we definitely experienced fall in full swing every single year beginning in September, sometimes as early as the end of August. But here in North Carolina it’s hit or miss and it usually comes pretty late in the season like the end of October if we’re lucky. By the middle of September I just can’t help myself anymore and my biological clock takes over and I immediately switch over into fall mode and start decorating every inch of my house and cooking up my favorite fall recipes.

If you know me personally you know I have a to die for homemade pumpkin chocolate chip muffin recipe that I make all of the time. In fact, it’s my most requested meal when we have family and friends come to visit. Even our dog Harley is a fan of these, I cannot tell you how many batches over the years he has eaten.

I was recently asked by Krusteaz to create my own recipe using their seasonal Pumpkin Spice Supreme Muffin Mix so I decided to turn up the level on my classic pumpkin muffin recipe and add a few extra goodies.

Add either chocolate chips or dried cranberries to the batter and thoroughly mix in a bowl.

Bake and let cool.

In a small microwave safe bowl melt chocolate chips in 30 second intervals. If the chocolate is too thick add in 1/4tsp vegetable oil at a time until you reach the desired consistency.

Drizzle over top muffins and dig in!

  • 1 package Krusteaz Pumpkin Spice Muffin Mix
  • 2/3 cup water
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 cup chocolate chips + additional 1/4 cup or melted drizzle
  • 1 cup dried cranberries (optional)


Instructions

  1. Stir together water, oil, egg and muffin mix until moistened. Stir in chocolate chips.
  2. Fill muffin cups 2/3 full.
  3. Bake as directed below or until golden brown. Cool 5 minutes
  4. In a small microwave safe bowl melt chocolate chips in 30 second intervals. If the chocolate is too thick add in 1/4tsp vegetable oil at a time until you reach the desired consistency.

I have got to say that using the box mix to make the muffins was really easy, less time consuming and they tasted really good!
