Take you boxed cake mix cupcakes to a whole new level with Fruity Pebbles cupcakes! This is a fun recipe that's perfect for parties or make it just because!

This recipe is a copycat for Duncan Hines Fruity Pebbles cupcakes. These Fruity Pebbles cupcakes have bits of the cereal in them and then sprinkled on top. This gives the cupcakes the same flavor as the cereal and a nice crunch in the butter cream icing.

I started with a box of cake mix and added white chocolate pudding to make it moist and boost the flavor. You can simply follow the directions on your favorite mix and add the cereal or make your favorite cake from scratch and add the cereal

I did make the buttercream frosting from scratch because I think it tastes better than store bought cans of frosting. You can use your favorite recipe for the icing.

Ingredients
For the Cupcakes
  • 1 white cake mix
  • 1 cup Fruity Pebbles cereal
  • 1 3.5 ounce box of white chocolate pudding mix
  • 3/4 cup water
  • 1/3 cup vegetable oil
  • 4 large egg whites
For the Frosting
  • 1 1/2 cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons vanilla Greek yogurt
  • 4 cups powdered sugar
  • 1/3 cup Fruity Pebbles cereal
Instructions

Preheat oven to 350 degrees Fahrenheit. Line a muffin tin with liners or spray with nonstick spray.
In a large mixing bowl, add the cake mix, pudding, water, oil, and eggs. Use a hand mixer to mix on medium until combined.
Fold in 3/4 cup of Fruity Pebbles.
Fill each of 24 muffin tins about 2/3 full. Sprinkle the rest of the cereal on top. Bake for 18 to 20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
In a large mixing bowl, cream the butter until light and fluffy.
Slowly add the powdered sugar 1 cup at a time. Add the vanilla and a tablespoon of yogurt and cream between each cup of sugar. Mix for 1 minute or until creamy.
Fill the prepared piping bag with frosting. Frost the cupcakes. Sprinkle dry cereal on top just before serving. The cereal will get soggy as it sits.
