This unique banana bread recipe has Fruity Pebbles in it for a delicious taste and texture. It's a quick bread recipe, so it's very easy to make.

This is a quick bread recipe, so it only takes a few minutes to make. It then bakes for an hour and 15 minutes. If you want to make it for breakfast, you can make it the night before.

It also makes a great dessert or snack. You can easily freeze leftovers for later. You can also make it as muffins, and the directions are in my blog post so click over to read that. To reduce the sugar, you can use Splenda for baking.

You can also use Cocoa Pebbles or another cereal. If you use a cereal with a larger size, then you'll want to crush it slightly to be about the size of Fruity Pebbles.

Ingredients

  • 2 cups Fruity Pebbles cereal
  • 2 bananas
  • 2 1/2 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 cup sugar
  • 2 eggs
Instructions

Preheat oven to 350 degrees F. Grease a bread pan with butter or cooking spray.
Combine flour, baking powder, and salt in a large mixing bowl.
Beat sugar and melted butter in a small bowl. Use a stand mixer or a hand mixer.
Add the eggs to the sugar and butter mixture and mix to combine.
Add half of the milk and half of the flour mixture to the wet ingredients and mix well.
Add the rest of the milk and the flour mixture and stir well.
Fold in the mashed banana and Fruity Pebbles cereal.
Bake for 1 hour and 15 minutes. Remove from oven and let cool for 10 to 15 minutes. Then carefully remove from the pan and let cool on a cooling rack.
