Vegan Chickpea Burritos

I've decided to stop eating pork and beef and also limit diary. So I've been dabbling in some alternatives! I made these vegan burritos and they were the bomb, might even prefer them 🤗

I started by washing and draining a can of chickpeas, then chopped yellow onion and peppers in a pan.

I sauteed with spices and some Frank's Red Hot, I put that s*** on everything!

My go toos are garlic salt, onion powder and chili powder. I never measure my spices I usually just eye ball them.

Make sure to stir for about 15 min until the chickpeas become soft.

Then I chopped some red onion and iceburg lettuce. I'm a big fan of onions.

Then I put it all in a flour tortilla and topped it off with Trader Joe's vegan dill dressing. I grabbed this stuff and was skeptical but it tastes amazing! I think it goes great with the spicey chickpeas.

I also like their dairy free ginger dressing.

I might like this better then beef tacos! Def better for you and the environment as well 😋

Ingredients

  • 1 can chickpeas
  • 1/2 chopped yellow onion
  • 1/2 chopped bell pepper
  • Spices to taste: garlic salt, chili powder, onion powder
  • Frank's red hot
  • Flour tortilla
  • Red onion chopped
  • Iceburg lettuce
  • Trader Joe's vegan dill dressing
Instructions

Wash and drain chickpeas
Cook in pan with onions, peppers, spices and hot sauce for 15 min
Combine in flour tortilla
Garnish with raw onion and lettuce and dressing
