This super easy recipe for red bean soft tacos is both vegetarian and delicious! There's nothing better than a hearty, healthy dinner with family or friends, and nothing more fun than assembling your own masterpiece exactly to your liking. I love the atmosphere this dish creates, spreading laughter and fun. These tacos are also packed with flavors, with a smokey, spicy feel to them. Softer flavors are brought through in the vegetables and garnishes, creating a Mexican feast, all wrapped up in a delicious soft taco. Store leftovers (if somehow there's any left!) separated into their various components in a airtight container in the refrigerator for up to four days.

Ingredients
Red bean mixture
  • 2 teaspoon olive oil
  • 1/2 white onion, chopped
  • 3 cloves garlic, chopped
  • 375 g canned red beans
  • 410g diced tomatoes
  • 1.5 teaspoons paprika
  • 1 teaspoon cumin
  • 3-5 dashes of tabasco sauce ( I like smoked Tabasco)
  • Dash of fresh/dry oregano
  • Ground pepper and salt to taste
  • 2 whole baby chilies
Corn salad
  • 280g canned corn
  • 4 mini peppers, sliced finely
  • 4 stalks fresh coriander, finely chopped
Assembly
  • 5 tortillas (I use whole wheat tortillas)

In a small pot over a medium flame, heat the olive oil, adding in onion and garlic when hot. Let it caramelize for 5 minutes, stirring occasionally with a
Add in red beans, diced tomatoes, paprika, cumin, tabasco, oregano, salt and pepper and chilies and stir until all ingredients are well combined. Let it simmer until the beans are soft - this should take around 20 minutes. Keep the mixture on a low heat until ready to serve.
Corn salad
In a medium bowl, mix together corn, peppers and coriander. Set aside.
Assembly
Place a tortilla flat on a plate.
Fill the middle third with red bean mixture, followed by corn mixture and mozzarella.
Fold up the two sides to form a taco shape. Serve immediately.
