Pork Rib Tacos

Ingredients


2. 5 pounds boneless pork ribs

1/2 white onion quartered

4 garlic cloves minced

1 teaspoon cumin

1 tablespoon chili powder

1 teaspoon of cayenne pepper

2 teaspoons oregano

1 tablespoons of chipotle in adobo sauce

2 teaspoons salt

1 teaspoon pepper

1/2 cup chicken broth


Salsa Roja


4 roma tomatoes

1/2 onion or a small one

1 jalapeño

2 garlic cloves

salt and pepper to taste


Instructions


In a bowl combine minced garlic, chipotle sauce, chili powder, cumin, oregano, cayenne, salt and pepper.


Rinse the pork boneless ribs, season with mixed spices. Mix well together.


Add pork to the slow cooker with chicken broth, and onion. Cook 4 to 5 hours on high until pork falls apart. Shred pork with two forks. Add pork back to slow cooker for another 10 minutes.


Salsa Roja

Roast the tomatoes at 400 degrees for 20 minutes. Add the roasted tomatoes to a blender. Add onion, garlic and about a 1 1/2 of jalapeño. Blend, add salt and pepper to taste.


Warm up flour tortilla in foil in the oven for 15-20 minutes. Add pork, salsa, red onions (to garnish) queso fresco, chopped cilantro and sprinkled lime juice.


Enjoy!

I cooked the boneless ribs for 5 hours on high in a slow cooker. But you can always put on low if you won’t be home due to work, it should take 8-9 hours to be done. You should know once your are able to shreds the ribs with a fork.
