Ingredients

  • 4 cups all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/2 cups warm water
  • Olive oil (for greasing)
  • Cornmeal (for dusting, optional)
Instructions

Activate the Yeast:
In a small bowl, combine warm water and sugar. Sprinkle the yeast over the water and let it sit for about 5 minutes until it becomes frothy.
Mix the Dough:
In a large mixing bowl, combine the flour and salt. Pour in the yeast mixture and stir until a sticky dough forms.
Knead the Dough:
Turn the dough out onto a lightly floured surface and knead it for about 8-10 minutes until it becomes smooth and elastic.
First Rise:
Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Preheat the Oven:
Preheat your oven to 425°F (220°C). Place a baking stone or an upside-down baking sheet in the oven to preheat.
Shape the Rolls:
Punch down the risen dough and divide it into 12 equal portions. Shape each portion into a ball and place them on a baking sheet lined with parchment paper. If using, sprinkle some cornmeal on the parchment paper.
Second Rise:
Cover the shaped rolls with a kitchen towel and let them rest for about 15-20 minutes.
Bake:
Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the rolls are golden brown and have a crisp crust.
Cool:
Allow the rolls to cool on a wire rack before serving.

Very crispy and great for a beginner like me. Can I add some say onion powder or some flaxseed for fiber. When would I put additions in?

Why does the picture look like a whole wheat or darker flour was used?
