Nothing beats the smell of a freshly baked dough in the morning, even more so when it’s flaky and stuffed with a mix of ground meat, tomato, and onions. Call it lahm b ajin or lahmajoon, or just meat flatbread. Would you eat meat for breakfast? Absolutely YES!


This is a traditional Lebanese street food, that you can find anywhere. The flat bread is typically filled with zaatar (thyme), cheese, or meat.


It is best enjoyed with a side of yogurt or laban ayran / doogh (yogurt drink that you can make with 1 cup of 3% yogurt, 1/2 cup water, salt and dried mint to taste) .


This recipe assumes the dough is ready.

Ingredients

  • - ~ 250g prepared dough (assumes it's prepared ahead of time and ready to use)
  • - 1/2 lb ground beef
  • -2 tbsp pomegranate mollasses
  • - 2 tomatoes finely chopped
  • - 1 yellow onion finely diced
  • - 1 tsp cinnamon
  • -1 tsp chili (optional)
  • - salt and pepper to taste
Instructions

- Blend tomatoes and onions until smooth, drain to get rid of excess water
- Add meat to the tomato / onion mix, add molasses, chili, salt, pepper, cinnamon, and blend well until smooth.
- Do another draining round to get rid of excess water
- Prepare your dough: flatten on
- Spread mix on dough, bake in oven for 10-15 min, serve with yogurt
