Breakfast pitta pizzaaaaa 🍕Okay okay okay, here is a fantassssstic breakfast/brunch idea for you. It’s super tasty, quick to make, and you can change the toppings to suit your pallet. You 100% have to give this one a go!


These pizzas are not only way healthier for you than a shop bought or takeaway pizza, but they are also more cost effective. Served on a pitta base, the pizza remains crunchy but firm to hold your toppings. I decided to create a vegetarian pizza, including freshly sliced avocados and a fried egg. However you could keep the base the same and change the toppings to suit yourself.


Ready in only 15 minutes these pizzas are a great lunch or brunch idea. There really is nothing better than on a chilli day to have a warming lunch to fill you up for the rest of the day!

Ingredients

  • 2 flat pittas
  • 2 eggs
  • handful of cherrie tomatoes chopped
  • 1 tsp oregano
  • 1 tsp basil
  • salt and pepper
  • 1 tsp tomato puree and 1 tsp water
  • 1 garlic clove finely chopped
  • grated cheese
  • handful of spinach
  • 1/2 avocado
  • 1 small onion finely sliced
Instructions

Mix together your tomatoes, herbs, garlic, puree & water in a bowl and spoon onto your pizza bases.
Bake in the oven at 425f for 5 mins
Meanwhile sweat down your onions in a frying pan for approx 5/10 mins
Add your onions, spinach, cheese onto your pizza and bake for another 5 mins.
At the same time fry your eggs in the frying pan and slice your avocado into thin strips.
When the edges of your pizza are brown remove from the oven, add your avocado and egg and serve.
