These biscuits are so moist and good. They have the texture of a muffin when you bite into them but are so easy to make. All you need is biscuit mix your choice of berries and a few other ingredients. If you don't have buttermilk don't worry just mix your milk with a little vinegar and wait five minutes and then you have buttermilk. I had to do this for the recipe and they taste amazing! Next time I decided though I will make some mini ones instead of the big ones I made because they are quite filling.

I put wax paper under the cooling rack to catch the extra icing for easy clean up.

They look delicious.

I had to use frozen blueberries I just put them in the strainer in the sink to unthaw.

Start by preheating your oven and then measuring out your dry ingredients.

Add in the buttermilk and stir to combine. I used just one bowl to mix all this up. I love that kind of recipe because I am not a fan of dishes.

Add in your berries and fold lightly. You want to keep the berries as whole as you can.

Drop by tablespoon or cookie scoop. You could also use an ice cream scoop to make larger ones.

Drizzle with the glaze after they are cooled. You can use any berry that you like for this recipe, strawberry, raspberry the list goes on.

Ingredients
Blueberry Biscuits
  • 2 1/2 C Biscuit baking mix.
  • 1/2 C granulated sugar
  • 1 1/4 C blueberries
  • 3/4 C buttermilk
Icing
  • 1 C powdered sugar
  • 1 to 2 Tbsp milk
Instructions
Blueberry biscuits
Preheat oven to 450 degrees.
Stir together biscuit mix buttermilk and sugar until a soft dough forms.
Fold in the blueberrries.
Scoop dough onto an ungreased cookie sheet.
Bake 9 to 12 minutes or until golden.
Let cool completely
Drizzle with icing.
Icing
Mix powdered sugar and milk until you have a loose consistency.
Drizzle with a fork over the biscuits.
