Pitaya Smoothie Bowl

Who would have thought that something so colourful happens to also be so nutritious!

How about starting off a Saturday morning with a bowl of fruit to get your energy for the day and, depending on what toppings you decide to go with, some vitamins and minerals too. In some ways, this recipe is almost like a deconstructed smoothie, but you get to experience the textures of the fruits and berries that are lost when they're all blended up, and also add in even more things like granola or coconut flakes.

So why not try this out instead of the usual fruit-on-side, granola and yoghurt.

Ingredients

  • 1 banana sliced and frozen
  • ½ cup mango chopped and frozen
  • 1 cup red dragon fruit (pitaya) chopped and frozen
  • ¼ cup coconut water or coconut milk
  • Toppings of choice! I use granola, coconut flakes, hemp seeds, blueberries, kiwi, sliced pitaya.
Instructions

Add the frozen fruit to a food processor or blender. Let it sit in the food processor for 3-5 minutes to slightly softened.
Add coconut water and blend it slow on low power at first, gradually increase the power.
Use spoon or spatula to mix the pieces that aren't blended. Continue with the process until very smooth and the mixture begins to fluff up.
Spoon the mixture into a bowl and top with your favorite toppings!
