I LOVE beets. And it is a good thing because my garden was drowning in them. I pickled them, roasted them, candied them, turned them into chips. And now I am making a drink out of them :)

This may sound really unappetizing to you. If you do not like beets, mayyyybee this is not the recipe for you! However, if you are feeling adventurous, give this a try! I promise the earthiness that beets normally emit is not that strong in this drink. Pairing it with some fresh herbs really played into beets' inherent flavors and it is a drink you can really wow a crowd with given it's eye-popping colors.

As always, omit the vodka for a healthy and unique drink. Enjoy!

Beet Juice Spritzer
  • 1 Tsp beet juice or beet powder
  • 1 shot vodka
  • ½ C club soda
  • 1 Tbsp simple syrup
  • Optional: muddle with fresh herbs like basil or rosemary
  • Optional garnishes: Fresh flowers
Beet Juice Spritzer
Squeeze beet juice from half a medium sized beet into glass, or stir in 1 tsp of beet powder
Stir in club soda
Stir in simple syrup or 1 Tbsp honey
Add vodka and pour over ice
Garnish with fresh flowers and herbs if you would like
  • If you do not have any real beets and hand and want to avoid some of the inherent beet mess, may I suggest beet powder? Easy clean-up and storage!

    This is a really creative way to use beets but I love them too so will have to give it a try! Also the color is just gorgeous!
