I absolutely love Cantucci! Or as they call them in English, “biscotti”, something that I learned fairly recently and that confused me so much as in Italian biscotti literally just means biscuits... Isn't that confusing? After some research the mistery was solved, apparently they are traditionally called "Biscotti di Prato" (Prato being a city in Tuscany) and of course biscotti is the short of that.

However you call them, you know that I’m talking about these almond dry biscuits, which can be eaten on their own or in the traditional way of dunking them in sweet wine for a more adult version!

Ingredients

  • 1 lb flour
  • 4 eggs
  • 12 oz sugar
  • 5 oz almonds
  • 2 tsp baking powder
  • 1 pinch salt
Instructions

Preheat the oven at 180°C (350°F)
Mix all the ingredients in a big bowl with a spoon. Once they start coming together use your hands to create a homogeneous dough.
Roll out into rolls that are around 3cm in diameter and place them on a baking sheet, keeping them quite far apart. Bake in the middle of the oven for 15-20 minutes, until golden.
Take them out of the oven and whilst they are still warm, cut them at a slight diagonal angle with a thickness of around 2cm.
You can now either leave them overnight to dry out and harden on their own, or spread them out on baking paper and return them to the oven for 4 minutes, then turn them and bake them for another 4 minutes. Leave for a few hours to cool down and enjoy!
These biscuits keep extremely well, and you can store them in a tin or a plastic ziplock bag for you to 2 months!!!! I always make extra and give them out as gifts.

      Hi. I updated the recipe with US measurements after a few requests, hope this helps. Just in case it happens again, there are quite a lot of converters online that will convert into lb and oz, just Google weight converter and there will be a few popping up. As I am in Europe I write all my recipes in grams, but appreciate not everyone uses them :D
