Minced Chicken Pot – Quick Healthy Dinner

I was going to make mince chicken cutlets for dinner with cooked rice on the side, but it was a busy evening and everyone was already hungry. So, I thought why not throw everything into one pot and cook the cutlets and the rice together. It went so well that I've upgraded the dish with grated vegetables next time, and now I have a nutritious meal done in under 30 minutes.

As all good recipes, this one too starts with frying onion.

Chop the onion and put it in a preheated pot with 2 tablespoons of vegetable oil.

While the onion is getting cooked, peel and grate the carrot and the zucchini. Dice the garlic and add to the onion. Add seasoning: ½ teaspoon of black pepper, 1 teaspoon of paprika. Stir well for about 20 seconds.

Then, add the grated vegetables.

Add the minced meat. Season with 1 tablespoon of BBQ spice. Stir well till most of the meat turns white.

Add the rice,

...and 3 cups of boiling water. Stir well. Turn the heat to high until the water starts boiling, then put a lead on the pot and simmer for about 15 minutes.

After 15 minutes, turn off the heat and let it sit for another 5 minutes.

Ingredients

  • 1 medium onion
  • 2 garlic clovers
  • 1 carrot
  • 1 zucchini
  • 500 gr minced chicken breast
  • 2 cups of round rice
Instructions

Boil about 1.5 litres of water
Chop the onion and put it in a preheated pot with 2 tablespoons of vegetable oil.
While the onion is getting cooked, peel and grate the carrot and the zucchini. Dice the garlic.
Stir the onion so it will not stick to the pot.
When the onion begins to caramelise, add the garlic and stir well for about 2 minutes.
Add seasoning: ½ teaspoon of black pepper, 1 teaspoon of paprika. Stir well for about 20 seconds.
Add the grated vegetables.
Pour about 1 teaspoon of salt and stir well.
Add the minced meat—season with 1 tablespoon of BBQ spice. Stir well till most of the meat turns white.
Add the rice and 3 cups of boiling water. Stir well.
Turn the heat to high until the water starts boiling, then put a lead on the pot and simmer for about 15 minutes.
Stir it every two-three minutes. If the stew is dry, add ½ cup of water.
After 15 minutes, please turn off the heat and let it sit for another 5 minutes.
Serve with Peanut butter.
