If you're a cinnamon roll lover this one is for you!

Our favorite pancake recipe - with a twist. I just love all things cinnamon and cinnamon rolls are one of my favorite treats. This flavor is perfect if you're craving something that resembles cinnamon rolls!

Ingredients in cinnamon roll pancakes

This recipe uses simple ingredients that one would already have in their pantry.

Use all-purpose flour for best results. I have yet to try using other flours for this recipe, but if you do, feel free to leave a comment below!

You can use dairy-free milk or regular.

You can use any type of sugar for this recipe, I decided to use coconut sugar.

Use 1 egg for best results.

You can use melted butter or coconut oil for this recipe.

For the cinnamon roll flavor you will need, cinnamon, brown or coconut sugar and melted coconut oil.

Ingredients

  • 2 cups all-purpose flour
  • 1 - 1/2 cups dairy-free milk
  • 1 egg
  • 1/4 cup coconut sugar
  • 4 tablespoons melted butter
  • 4 teaspoons baking powder
  • 1/3 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1 - 1/2 teaspoons cinnamon
  • 2 - 1/2 teaspoons coconut sugar
  • 2 teaspoons melted coconut oil
Instructions

In a bowl, whisk the sugar with the butter then add the egg and whisk futher.
Add the milk, vanilla and mix until combined.
Sift in the flour, baking powder, baking soda, salt and mix until combined.
In a small bowl, add the melted coconut oil, cinnamon and brown sugar and mix together until combined.
Next, pour the batter into the pan.
Grab a teaspoon and scoop out a small amount of cinnamon mixture and spread it on top of the batter in the shape of a circle.
Using the teaspoon, press down the mixture slightly so that it gets incorporated into the batter.
Once the batter starts to produce little bubbles it means it's time to flip.
Serve with fruit, nuts, yogurt, chocolate, nut butter or anything you want!

    Sounds delicious! I'm assuming that the pan should be sprayed or lightly oiled before cooking the pancakes?

    In the ingredients, there’s coconut sugar but in the directions it’s brown sugar🤔. Which is which? Also, with the dairy free milk, is it powder or liquid?

      You can use brown or coconut sugar, I've tried with both and outcome is the same! Milk is regular milk, I have never used powdered milk before.
