With Zucchini season upon us, I am always looking for new and tasty ways to cook up this delicious vegetable. My favorite way to enjoy zucchini is simply grilled on the bbq. I love the sweet caramelization the zucchini gets from the grill. However I realize not everyone has a grill available (we do not) so I have been looking for a way to achieve that same flavor by roasting the zucchini in the oven.

The first time I tried roasting the zucchini in the oven I kept it simple and only used olive oil, salt and pepper to season it with, and although it came out beautifully cooked and caramelized it was lacking some flavor.

This time around I added some additional seasoning of garlic and Freshly grated Parmesan and the end result was delicious! The combination of garlic and Parmesan together is a no brainer, but add it to the sweet zucchini and I guarantee you will be wishing that you had made more!

I served these Garlic Parmesan zucchini spears along side chicken on a bun for a lighter healthier alternative to French fries.

Begin by washing and drying three zucchini.

Slice the zucchini into spears and add them to a large bowl along with the olive oil, garlic powder, salt, minced garlic and Parmesan. Give everything a good toss until the zucchini is evenly coated.

Arrange the zucchini spears on a parchment paper lined tray in a single layer.

Bake in the oven for 10-15 minutes until fork tender.

Turn the oven on to broil for an additional 2-5 minutes or until the tops of the zucchini have browned and the Parmesan cheese is slightly crispy.

Remove from the oven, garnish with a little more Parmesan and enjoy!

The zucchini spears served as a side dish with our dinner.

Ingredients

  • 3 zucchini
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1 tsp minced garlic
  • 2 tbsp freshly grated Parmesan plus more for garnish
Instructions
Garlic Parmesan Zucchini Spears
Preheat oven to 400.
Wash and dry the zucchini.
Cut each zucchini in half and then quarter it lengthwise to form spears. If the zucchini is larger cut it slightly smaller. You want all the spears to be of similar size so they cook evenly.
Put the cut zucchini to a large bowl and add in the olive oil, garlic powder, salt, minced garlic and Parmesan.
Toss everything until the zucchini is evenly coated.
Arrange the zucchini spears on a parchment paper lined tray in a single layer.
Bake in the oven for 10-15 minutes until fork tender.

Tips
  • Make sure the zucchini is nice and dry to avoid it becoming soggy.
  • Closely watch the zucchini while broiling it so that it does not burn.
