Gaji Namul (가지 나물) is an amazing Korean eggplant side dish that goes especially well with KBQQ! I had this dish at a restaurant with my family and knew I needed to recreate it at home! This dish is insanely quick to put together and is the perfect way to use up eggplant in a fun way. The eggplant used is the Japanese eggplant variety, but you can also use Italian eggplant. Simply scale up the marinade portion fo the recipe so that the total amount of eggplant is completely coated. Enjoy it warm with a big bowl of rice!

Recipe details
Ingredients
- 1-2 medium eggplant
- 1 green onion
- 1 clove garlic, minced
- 1 ½ tsp soy sauce
- 2 tsp sesame oil
- ¼ tsp sugar
- ½ tsp gochugaru flakes
- 1 tsp sesame seeds
- Fresh ground black pepper
Instructions
- Cut eggplant into 2” rods.
- Steam 3-7 mins or until softened, but firm.
- Make marinade with remaining ingredients in bowl.
- Toss steamed eggplant in marinade bowl.
- Serve.
