Cauliflower “schiacciata” (flat pie) recipe with crunchy borders and a soft filling, really delicious, kid approved too.

And that’s why I’ve decided to load my cauliflower schiacciata (flat pie) with fresh sage leaves from my garden which will also infuse your kitchen with a fabulous smell and boost your mood too.

This is a great recipe to hide some healthy veggies in it and it’s also a lower carb alternative to a regular pie.

Ingredients
Ingredients
  • 350gr cauliflower florets (12.3 ounces)
  • 100gr breadcrumbs (3.5 ounces)
  • 20gr Parmesan cheese (0.7 ounces)
  • 1 egg
  • 200ml water (6.8 fluid ounces)
  • Salt and pepper
  • Extra virgin olive oil 
  • Sage leaves (optional but highly recommended as your kitchen will smell amazing if you add them!)

Method
Add cauliflower, breadcrumbs, grated cheese, egg, water, salt and pepper in a food processor till you get a creamy mixture.
Transfer on a rectangular oven tray with parchment paper and spread well.
Garnish with sage if you like. I think it does add a lovely taste to the schiacciata.
Drizzle some extra virgin olive on top and grate some Parmesan cheese.
Bake in preheated oven at 180 degrees Celsius for about 30 minutes.
