Balsamic Roasted Broccoli

Roasted broccoli is one of my favorite ways to prepare and eat broccoli.

When making roasted broccoli, I typically keep it simple and use only olive oil, salt and pepper for seasonings. This time I decided to switch things up a little and try roasting the broccoli with some red onions and a balsamic glaze. The end results were phenomenal!

I chose to use a balsamic glaze instead of regular balsamic vinegar as I thought that it would stick to the broccoli better, as well it kept the broccoli from becoming too wet. It’s important for the broccoli to be fairly dry in order to achieve the nice crispy bits you get from oven roasted broccoli.

This is a dish that I will definitely be making again, and I hope that if you try this, you will enjoy it just as much as my family and I did!

Begin by washing and roughly cutting up two large heads of broccoli. Lay the broccoli out on a clean dish towel to dry. While the broccoli is drying chop up a large red onion.

Add the broccoli and red onions to a large bowl.

To the broccoli mix add 2 tbsp olive oil, 1-2 tbsp balsamic glaze and salt and pepper to taste. Toss everything until evenly coated.

Place the seasoned broccoli and onions in a single layer on a parchment paper lined baking sheet.

Place the tray in the oven at 425 degrees for 25 minutes.

The broccoli will be ready when it is fork tender.

You can see all of the delicious crispy bits around the edges of the broccoli. Yummy! The balsamic glaze also helps caramelize the onions beautifully.

I find that this dish tastes best at room temperature or slightly warmer, so it’s best to let it sit a bit before serving.

This broccoli dish tastes incredible on its own, but to take it up a notch I highly recommend topping it off with some crumbled feta cheese.

Ingredients

  • 2 large heads broccoli
  • 1 large red onion
  • 1-2 tbsp balsamic glaze
  • 2 tbsp olive oil
  • salt and pepper to taste
  • feta cheese for garnish

  • Preheat oven to 425
  • Wash and dry the broccoli and roughly chop into pieces.
  • Add the broccoli to a large bowl along with 1 roughly chopped red onion.
  • Drizzle the broccoli with the balsamic glaze and olive oil. Season with salt and pepper and toss until evenly combined.
  • Place the broccoli on a parchment lined baking sheet and bake for 25 minutes.
  • Remove from oven and let cool slightly before garnishing with feta cheese and serving.
  • Enjoy!

    Do you make the balsamic glaze or is this something that you bought already prepared?

      It comes as a glaze and can be found with all the other vinegars. Regular balsamic vinegar will also work if you can’t find it :)
