Ingredients

  • 32 oz chicken broth
  • 2 garlic cloves, smashed
  • 2 tsp minced ginger
  • 2 tsp soy sauce
  • 1 tsp Mirin (sweet cooking wine)
  • 1/2 tsp sesame oil
  • 4 scallions, chopped (some set aside for garnish)
  • 1 bunch rainbow chard, stems removed and roughly chopped
  • 8 oz noodles of your choice, cooked and set aside (optional)
Instructions

Place the broth ingredients in a medium pot over high heat.
Bring up to a boil and reduce to a simmer for 5 - 10 minutes to allow the flavors to infuse.
Remove the garlic and ginger.
Add the chard and turn off the flame (the chard will wilt from the residual heat of the soup)..
To serve, Place cooked noodles in each bowl. Ladle the soup into the bowls and top with sliced scallions.
