Thai green cauliflower curry


On the road you often need a quick feed, but still I don’t want to sacrifice the flavour, so this dish was the perfect solution. This was my first time using cauliflower for a Thai green curry, but it worked like a bomb! 💣


By cooking it al dente the cauliflower keeps a lovely crunch within the creamy coconut spicy sauce.


I used blue dragons Thai green curry paste, and it really does have a kick to it. I used half a jar and it was quite spicy so use less if you don’t like it as hot! Alternative use another brand and add more to get to your desired spice level.

Ingredients

  • 1/2 cauliflower
  • 1/2 red onion
  • 1 pepper
  • 2 cloves of garlic
  • 1 cm cube knob of ginger 
  • 1 tin of coconut milk
  • 1/2 stock cube 
  • Thai green curry paste (I used blue dragon.. 1/2 and it’s quite hot not that it says that on the tin 😂)
  • Rice for serving
Instructions

Finally cube your red onion and soften in a large saucepan for a few minutes.
Next finally cut your garlic and ginger, and repeat.
Cut your pepper into long strips and repeat.
Cut your cauliflower into small equal sized florets.
Now add in the pan your Thai paste, coconut milk, and stock cube.
Bring to heat,then add the cauliflower and simmer for approx 15/20 until cauliflower is cooked (still al dente)
