  • Preheat your oven to 400°F.
  • Peel and dice beets. Place cubes on a baking sheet, drizzle with olive oil and use your hands to move them around to fully coat.
  • Sprinkle cubes with salt and pepper and bake for about 30 minutes. Once beets can be easily pierced through with the prongs of a fork, they are done.
  • While beets roast, place mixed greens, diced avocado, goat cheese crumbles and chopped walnuts in a large mixing bowl.
  • In a separate, smaller mixing bowl, make your salad dressing.
  • Once your beets are done roasting, add them to the bowl and toss all ingredients together.

Salad
  • 2 large beets *peeled & diced
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 cups mixed greens
  • 1/2 cup goat cheese crumbles
  • 1/4 cup chopped walnuts
  • 1 medium ripe avocado *diced
Instructions

Preheat oven to 400°F.
Peel and dice beets and place cubes on a baking sheet. Drizzle with olive oil and use your hands to move the beets around to coat. Sprinkle with salt and pepper.
Roast/bake your beets for 25-30 minutes. Once they can easily be pierced through with a fork, they are done.
While beets are roasting, measure mixed greens into a large mixing bowl. Add goat cheese crumbles, chopped walnuts and diced avocado.
Once beets are done roasting, allow them to cool down a bit. Then, add them to the mixing bowl along with everything else. Toss all ingredients together.
Plate salad, add dressing and enjoy!
Tips
  • A good vegetable peeler will make prepping your beets so much easier! For the longest time I used an old, dull peeler and dreaded working with thick skinned veggies. Finally, I broke down and bought a new, heavy duty vegetable peeler (it was only $10) and highly recommend you do the same if you're struggling! Mine is OXO brand and it's the best!
