Ingredients

  • 1/4 cup lemon juice
  • 1 tbsp fresh minced garlic
  • 1 tbsp grated Parmesan
  • 2 tbsp dried oregano
  • Pinch of salt
  • Cracked black pepper to taste
  • 1 tbsp olive oil, plus more for sautéing
  • 6 boneless skinless chicken thighs
Instructions

Mix first 7 ingredients in a large bowl
Add chicken and turn to coat
Allow to marinate for 20 minutes up to 4 hours
Coat bottom of a large nonstick pan with olive oil
Cook chicken over medium-high heat 5-7 minutes per side or until cooked through
Tips
  • Serve with a side of cous cous and cucumbers.
  • Also delicious folded into a pita and eaten as a sandwich.
