  • Non-stick cooking spray
  • 2lb boneless, skinless chicken breast
  • 1/4 cup balsamic vinegar
  • 1/2 cup low sodium chicken stock
  • 1 tbsp. brown sugar
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • salt and pepper to taste

Spray instant pot with non-stick cooking spray
Season chicken with salt, pepper, oregano and basil, and place in instant pot
Whisk together balsamic vinegar, chicken stock, and brown sugar in a small bowl
Pour sauce over chicken and set instant pot to cook for 12 minutes
Allow natural release for 5 minutes, then quick release
Shred chicken and serve!
