Crockpot Salsa Chicken

You should definitely make this chicken a part of your next meal prep! It’s so good, super easy, and only requires a few ingredients. The best type of meal prep is one that doesn’t need a lot of effort! I like to use the salsa chicken in burrito bowls along with black beans, corn, rice, lettuce, and shredded cheese. I also really like to make chicken tacos with it. Either way, you can’t go wrong! It freezes nicely too, so you can make a big batch ahead of time and reheat it in the crockpot when you’re ready to eat it.

Add chicken to crockpot along with salsa, taco seasoning, and lime juice.

After 5-6 hours, shred.

Add to burrito bowls or chicken tacos!

Ingredients

  • 1 chicken breast
  • 1 tsp taco seasoning
  • 1/4 cup salsa
  • Splash of lime juice (optional but encouraged)
Instructions

Place chicken in crockpot.
Mix together taco seasoning, salsa, and lime juice.
Pour over chicken.
Cook on low for 5-6 hours.
Chicken should shred really easily when it’s done.
Add to burrito bowls or tacos!
