These wraps are refreshing as they have a fresh lettuce wrap on the outside, fresh tomatoes chopped up inside, and are garnished with fresh cilantro for that elevated flavor. The chicken is perfectly seasoned, and the vegetables sauteed to perfection. You have got the crunch factor in the meal! Ingredients

  • 1/2 bunch of cilantro
  • 2 chicken breasts
  • 1 yellow onion
  • 1 roma tomato
  • 1 avocado (ripe)
  • 6 leaves of romaine lettuce
  • 1 green bell pepper
  • 4 cloves of garlic
  • 10 mushrooms
  • 4 tablespoons of olive oil
  • Salt and pepper
  • 3 tablespoons of taco seasoning
  • 1 tablespoon of paprika
  • 1 teaspoon of cayenne pepper
Instructions

Dice up half of your onion and the other half of your onion, cut into half moons
Add 2 tablespoons of oil to a non-stick pan and sautee the diced onion in the pan in medium heat
Chop up your chicken into strips and mince 2 gloves of garlic
When onion is translucent, add in your chicken and the minced garlic to the pan. Add in your paprika, 2 tablespoons of taco seasoning, and cayenne pepper. Stir the chicken on medium heat.
While chicken is cooking, slice your mushrooms and green bell peppers. Mince two more cloves of garlic.
Take the chicken off the stove when it is fully cooked and set aside to cool
In a pan, add in 1 tablespoon of olive oil and on medium heat, add in your sliced mushrooms, the remainder of your onion, green peppers, and garlic.
Add to your vegetables 1 tablespoon of taco seasonings and salt and pepper to taste. Cook until onions are translucent, taking the vegetables off the heat and letting them cool when cooked.
Dice the roma tomato and cut your avocado into slices.
Take your lettuce leaf and top it with chicken, the vegetable mixture, the diced tomatoes, avocado and add in cilantro to your desire.
