Buttery Fried Chicken Breast

This recipe came about out of necessity, I had some thin sliced chicken breasts. Since it is so cold out I decided to make some fried chicken with them. I did not have any flour, which is not normal for me. With all the holiday baking I forgot to replenish my baking supplies. I found some italian bread crumbs and some of the buttery crackers. I decided to crush the crackers in the food processor and add in the bread crumbs and all the seasonings, which included garlic powder, onion powder, paprika and seasoning salt and then some pepper. I combined all of that together and made a dredging station.by pouring the cracker mixture into a plate. I added two eggs that I beat into a pie plate. I put my oil in my frying pan to heat. While that was heating I dredged my chicken pieces in the egg mixture first and then the cracker mixture. When the oil reached temperature I carefully slid the chicken pieces into the pan. I fried them for approximately 10 minutes per side or until they reached a temp of 165 degrees and were golden brown.

The crackers gave the coating a nice crunch.

Ingredients
Buttery crust
  • 1/2 a sleeve of buttery crackers
  • 1/2 C Italian bread crumbs
  • 1 t Paprika
  • 1 t seasoning salt
  • 1 t pepper
  • 1/2 t onion powder
  • 1 t garlic powder
  • 2 eggs beaten slightly
  • 4 thin chicken breasts
Instructions
For the crust
Put oil into your frying pan and bring it up to temperature to fry the chicken, approximately 350 degrees.
In a food processor on pulse combine all ingredients except eggs and chicken.
Put the cracker mixture into a pan
Put the beaten eggs into a pan
Dip the chicken pieces into the eggs and then the cracker mixture. Thoroughly coating each side.
Fry in oil for approximately 10 minutes each side. Checking the temperature and frying to a golden brown.
Tips
  • You could easily use any chicken you would like.
