BBQ Chicken Lettuce Wraps
When you can make something simple yet delicious its the best feeling in the world. These BBQ Chicken Lettuce Wraps are just that, simple and delicious. It was a beautiful day and started feeling like spring. We were trapped in our house, sorry quarantined, and we wanted to make something to eat on the back porch. These things are perfect, no need for utensils, the lettuce is the utensil.
The decision to make these BBQ Chicken Lettuce Wraps was simple, I’m from Memphis so my blood is half barbecue sauce. We had plenty of chicken so I said lets do it. Val has been on a real health kick lately and didn’t want anything fattening, so I said lets just use the lettuce as the wrapper. The decision to add the slaw on top was simple because the tangy of the apple cider vinegar slaw is just perfect with BBQ. The crispiness of the fresh green onion and lettuce adds that bit of crunch you need to this meal. Literally every bite is a symphony, whether its the crunch and freshness of the lettuce or the flavors its so refreshing. This meal came together so simply, the hardest part was deciding to name it BBQ Chicken Lettuce Wraps haha.
These times are a bit crazy with the quarantine and all. Its easy to get lazy and just order in. Or to get some microwave dinners from the grocery store. It’s important for us to try and eat semi healthy from time to time not to stay fit. But, its been proven that things you put in your stomach are linked to your mood. If you eat unhealthy things it can hurt your mental health as well as your body. That’s the last thing anyone needs during our current times. BBQ Chicken Lettuce Wraps

Ingredients
Slaw
- 2 cups red cabbage chopped
- 1 cup carrots diced
- 2 tbsp apple cider vinegar
- 1 tbsp mayo
- 1-2 tbsp spicy brown mustard
- 1/2 tsp salt
- 1/2 tsp pepper
BBQ Chicken Wrap
- 2 chicken breasts
- 1/4 cup your favorite BBQ Sauce
- 1/2 cup red pepper diced
- 1/2 cup red onion diced
- 1/2 tsp salt
- 1/2 tsp pepper
- 2-3 green onions chopped
- 6 leaves of romaine lettuce
Instructions
Slaw
- Add cabbage and carrots into a container
- Add apple cider vinegar, mustard, and mayo
- Stir contents until everything is thoroughly mixed
- Add in salt and pepper and mix slightly more
BBQ Chicken
- Salt and Pepper both sides of the chicken for seasoning
- Add olive oil to a medium-high heat pan
- Add chicken and cook 6 minutes per side or until a nice golden brown exterior and internal temp is 160°
- Remove chicken from pan and set aside
- Add a slight bit of olive oil to coat the still hot pan
- Add diced onions and red peppers to pan and scrape up chicken bits from pan
- Once the onions start to get translucent, shred chicken that was resting and throw it back in the pan
- Add in BBQ sauce and mix well
- Remove all contents from pan and put inside lettuce leaves
- Top with slaw and green onions
