The BEST Strawberry Bread
Strawberry season is here in North Carolina and my husband recently brought home a plethora of strawberries from a local farm.
I love using strawberries in salads, as a snack, in oatmeal, yogurt or cottage cheese but I have rarely baked with them. I came across a recipe for strawberry bread from Tastes of Lizzy T website and decided to give it a try. OH MY!! As my husband put it “it is the best recipe I have ever baked.”
The bread is moist, perfectly sweet and the glaze puts it over the top! I decided to slightly reduce the glaze recipe to cut back on some sugar and it was still delicious!

Ingredients
For the Bread
- 3/4 cup granulated sugar
- 1/2 cup whole milk
- 1/2 cup canola oil or coconut oil
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups diced strawberries
- 2 tablespoons all-purpose flour
For the Glaze
- 1 cup powdered sugar
- 1 tablespoon melted butter
- 1/3 cup finely diced strawberries
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons milk
Instructions
For the Bread
- Preheat the oven to 350ºF
- In a medium bowl, stir together the sugar, milk, oil, egg and vanilla.
- In a separate bowl, combine the flour, baking powder and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined.
- In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries.
- Fold the floured strawberries gently into the batter.
- Pour the bread batter into a greased 9″x5″ bread pan.
- Bake at 350 degrees for 50-55 minutes.
- Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
For the Glaze
- Combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth. Add milk, 1 tbsp at a time until desired consistency is reached.
- Pour over bread once bread is completely cooled.
Tips
- Store in an air-tight container in the refrigerator for up to 3 days
