Macerated Strawberries

This is one of the easiest recipes you can make. It has only four ingredients and endless possibilities for upping your game with garnishes and toppings.

When people eat this, they can almost never guess what the "sauce" is made from. Chocolate is the number one guess (wrong!). When I tell people that the sauce is made from balsamic vinegar, no one believes it.

The key to this recipe is to use a good quality balsamic vinegar and to cook the liquid down a bit so that it gets thick and syrupy.

This is the perfect dessert for people who want something sweet, that is also on the healthy side.

Ingredients
Strawberries
  • 1 (16oz) package of strawberries
  • 1/4 cup balsamic vinegar
  • 2 Tablespoons water
  • 2-3 Tablespoons honey (I use vegan honey)
Basil cream
  • 1 ( .5 oz) package fresh basil
  • 3/4 cup coconut cream (cream only from a can of coconut milk or coconut cream)
  • 1-2 Tablespoons honey
  • 1/4 teaspoon vanilla
Instructions

In a small pot, bring the vinegar, water and honey to a boil, stirring constantly. Turn down to a simmer and cook, stirring frequently until slightly reduced. Set aside to cool a bit.
Meanwhile, wash and hull the strawberries (remove the green tops), then slice them into approximately 1/4" pieces.
Place the strawberries in a container, pour the sauce over and stir well to combine. Cover and refrigerate at least an hour before serving.
Basil Cream
In a blender, combine the leaves from the package of basil, coconut cream, honey and vanilla. Puree until smooth and creamy.
Refrigerate to allow the cream to firm up, then scoop or spoon on top of the berries right before serving.
Tips
  • Instead of making the basil cream, you can just chop or slice some fresh basil for on top.
  • These berries are great served over biscuits with whipped cream. Take strawberry shortcake to the next level.
  • Pistachios also make a great topping. Chop or turn them into a breadcrumb type mixture by putting them in a small processor or blender.
