Cold Berries and Cherry Soup

In the heat of summer, we could not wish for more than a cold soup. After the casual boring cherry soup, maybe strawberry cream soup, try this mixed fruit miracle too! To make it even better and tastier, you must add some alcohol to it. You can actually make this recipe using any kind of berries, but if you’re brave enough and maybe autumn is approaching, you definitely have to try the plum version as well. I highly recommend the mint leaf as an addition as well. I hope everyone has a wonderful summer and tries out some new summer recipes!

Ingredients

  • 500 g fresh strawberries
  • 250 g fresh blueberries
  • 500 g fresh or frozen cherries
  • 80 ml white wine
  • 250 ml heavy cream
  • 250 ml milk
  • 3 Tbsp. maple syrup
  • pinch of cinnamon
  • 1 tsp. vanilla
  • salt and pepper
For the decoration
  • fresh strawberries and blueberries
  • mint leaves
  • 6 Tbsp. Greek yogurt
Instructions

Cook the fruits and wine in a medium pot for 10 minutes. Using a blender, mix it with all the other ingredients. Let it cool completely. Serve cold with fresh berries, mint leaves and Greek yogurt.
