Healthy and Nutritious Cake made using Millet flour & oranges. Any flour can be used to make this cake. This recipe doesn't need refined flour, butter or eggs. I used to make this often when my daughter was a toddler. This millet cake is made with no unhealthy ingredients & is quite healthy if eaten in moderation.

This cake is so easy to make from scratch, you don’t even have to use a mixer. All you need are mixing bowls and a whisk and you’ll have this flavorful cake ready in no time.

This Cake comes together quickly and easily! Moist and soft, will melt in your mouth & it's filled with so much orange flavour. Enjoy this cake for breakfast, dessert, or as a mid-day snack!

Ingredients

  • 3/4 cup Millet flour(Bajra,Ragi,jowar)
  • 1/4 cup Whole wheat flour 
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 Cup Coconut sugar 
  • 1/4 Cup unflavored oil
  • 2 tsp Orange zest
  • 1/4 Cup Orange juice 
  • 3 tbsp Yogurt 
  • 1/2 tsp vanilla extract 
  • A pinch salt
Instructions

Preheat oven at 180 degree Celsius for 10 minutes.
In a large mixing bowl, add coconut sugar and orange zest. Rub it well using fingers. 
Then add oil, yogurt (curd) & vanilla essence whisk it well until sugar dissolves completely.
Now add orange juice & combine it well.
In another mixing bowl, sieve Millet flour, wheat flour, baking soda, baking powder and salt.
Add the dry ingredients to the wet ingredients gradually in 2 batch and fold the batter until combines well.
Don't overmix the batter & make sure the batter is lump free.
Spread the batter evenly into prepared baking pan.
Bake for 40 minutes. Baking times vary, so keep an eye. 
The cake is done when a toothpick inserted in the center comes out clean. 
Remove the cake from the oven and set on a wire rack. Allow to slightly cool for at least 30 to 35 minutes before slicing and serving.
Tips
  • Make sure you use fresh oranges and good quality millet flour.
  • For garnishing, you can add any dryfruits of your choice.
  • You can enjoy this cake as dessert after a meal. 
  • It’s taste delicious if served with ice-cream. 
  • You can store the cake wrap it well and freeze for up to 1/2 month.
