Orange Cookies are perfect snack for any age group and can be munched in between meals or when ever hungry. These buttery cookies melts in mouth and extremely delicious. I had made these eggless Orange cookies for our recent travel trip to Mangalore. As it's a long travel so I made different varieties of snacks to munch in. Everytime, I choose minimal ingredients for baking cookies and mostly it takes very less time. For a healthier version, you can use almond butter or peanut butter instead of regular butter. To enhance the taste of these cookies, you can add dry roast desiccated coconut as well.

I am a big fan of baking cookies. The recipes are often simple without the need of exhaustive list of ingredients or time for baking. I have made my point, cookies are really simple to make! My daughter love homemade cookies, those are her favorite kind. I simply love the freshness & aroma of oranges, so decided to dig in and bake these delicious beauties.

Nowadays it's so much fun to bake with kid's, they are so excited & keen to learn new things. Nevertheless we spend some quality time together doing something productive at the end. This cookie recipe is quite easy and simple requires minimal ingredients. And yes, Whenever we travel or go for a short trip these homemade cookies are always life saver. As earlier I mentioned baking with family is really fun.

Ingredients

  • 2 cup flour
  • 1 tsp baking powder 
  • 1 tsp Corn starch 
  • 1/2 cup salted butter
  • 3/4 sugar
  • 1/4 orange juice 
  • 2 tsp orange zest
  • 1 tsp vanilla essence. 
  • Few drops of orange color (optional)
Instructions

Preheat Oven at 180°C & line baking pan with parchment paper.
In a mixing bowl, add softened butter using hand mixer, beat the butter till soft and fluffy.
Add the sugar and beat again, till pale & creamy. 
Add orange zest, orange juice, vanilla essence & fold it. 
Sieve wheat flour, corn starch,baking powder  and mix well.
Do not over mix. Use a spatula to mix in the flour till just combined. 
Scoop out 2 tbsp dough and make a round shape using your hand & gently press with your palms.
Arrange the cookies on the baking tray at a distance of 1 inch between each cookie.
Bake for 20 minutes until the edges are browned.
Let stand for about a minute on the sheet and then transfer to a wired cooling rack to cool completely.
Store Orange Cookies in an airtight container for further use.
These cookies make a delicious combination with Coffee.
Tips
  • I have used less sugar powder, if you want more sweeter than add 1/2 cup sugar powder.
  • Don't knead the cookie dough like a roti dough just combine it all together using a spatula.
  • Once baked cool down the cookies completely.
  • You can use any dryfruits powder to make the cookies more creamy.
  • Instead of Vanilla essence, you can also use orange emulsion or orange essence.
