Soup, the greatest comfort food of all time. Perfect for when you are feeling under the weather, have just come back from a long day of skiing in the cold mountains, or if you need a pick me up on a gloomy rainy day. This recipe is easy to make and rather quick too, just throw the ingredients in a pot and off you go! Chicken noodle soup is a classic, and I could personally eat this recipe everyday, no questions asked! This recipe will leave everyone wanting more and even the pickiest eaters will be thrilled about this recipe. Enjoy!

Ingredients

  • 1 yellow onion
  • 3 chicken thighs
  • 1 jumbo carrot
  • 2 celery sticks
  • 200g of whole wheat fusilli
  • 2 containers of chicken broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • 4 cloves of minced garlic
  • Salt and pepper to taste
  • Handful of chopped kale
  • 1 tablespoon of olive oil
  • 2 cups of boiling water
Instructions

Chop up the carrots, celery and onion into small pieces
Add the olive oil and chopped veggies and your minced garlic into a pan and cook on medium heat until the onions are translucent
In a pot add in your 2 cups of boiling water, chicken broth, veggies, raw chicken thighs, thyme, bay leaf and salt and pepper
Bring the pot to a boil
Once the soup has started to boil add in your fusilli and cook on medium heat
When the noodles have started to cook, take the chicken out of the pot, shred the chicken carefully and then add it back to the pot, while also adding in the chopped up kale and cook for a couple more minutes
