When I first decided to switch to a low carb lifestyle, one of the things I thought I would miss the most was a Friday night pizza.


This low carb, high protein, keto friendly recipe is the perfect pizza alternative. Forget all those other versions you have seen that try to imitate the dough using flour alternatives, tortilla wraps etc. This recipe is pure meat, with the base made entirely from chicken and cheese!


It's like you've ditched the boring pizza base and just kept the delicious toppings, enjoying all of the calories while getting a protein rich meal that will keep you fuller for longer.


In this recipe, I have topped the pizza with a buffalo sauce and blue cheese topping, but you could definitely experiment with different flavours using this pizza base.

The perfect pizza alternative to those choosing a low carb lifestyle.

First, the chicken and cheese are blended together and pressed to form the shape of a pizza crust.

The "crust" is then baked until fully cooked and crisped.

Then the pizza base is smothered in a buffalo sauce and blue cheese, before being baked again until the cheese has melted and turned golden.

Ingredients

  • 450g or 1lb of chicken thighs, boneless and skinless
  • 120g or 1 cup of shredded mozzarella
  • 1 large egg
  • Salt and Black pepper
  • 1 tbsp sour cream
  • 4 tbsps hot sauce, such as Frank's
  • 30g or 1oz of blue cheese, such as stilton, crumbled
  • 1 spring onion, thinly sliced
Instructions

Preheat your oven to 210 degrees celcius or 400 degrees Fahrenheit.
Line a pizza tray with greaseproof paper or aluminium foil.
Place the chicken thighs in a blender and process to a smooth paste.
Put the chicken in a large bowl with half of the mozzarella, egg and a good pinch of salt and pepper and mix well to combine. Work the cheese into the chicken with your hands until the mixture comes together like a dough.
Press the chicken mixture onto the pizza tray evenly, so the tray is covered and the mixture takes the shape of a pizza crust. It should be about 1/4 of an inch thick.
Bake in the centre of your oven for 25 minutes or until it is fully cooked and starting to turn golden.
Remove the base from the oven and prepare your toppings.
Mix the sour cream with 3 tbsps of the hot sauce then spread evenly over the top of the pizza.
Crumble the blue cheese on top of the buffalo sauce, followed by the remaining mozzarella and place the pizza back in the oven for 10 minutes, or until the cheese has melted and is starting to brown.
Drizzle over the remaining hot sauce and top with the sliced spring onions.
