Here is an easy Instant Pot broccoli soup recipe that you’ll want to make over and over again! For those avoiding dairy, this is a great recipe as it does not call for cheese or heavy cream. It is a delicious soup with simple ingredients and can be served in a bread bowl if desired. You still get a creamy soup texture and can add some sharp cheddar cheese to the top if desired. This easy recipe has a fast cook time since you don’t need to simmer on a stove top or in a slow cooker (thank you Instant Pot!). It is also a vegetarian soup that qualifies as comfort food! This is a personal favorite soup and I hope you enjoy it as much as I do!

Ingredients;

1 yellow onion

1 potato

2 tbsp olive oil

1 head of broccoli, cut into florets

3 cloves of garlic

4 cups of chicken or vegetable broth or water (stick with vegetable broth to make this a vegan variation.)

1 tsp salt

pepper to taste

Equipment:

immersion blender

  1. Select the saute function on the Instant Pot.
  2. Coat the bottom of the pot with oil.

3. Cook the diced onion and garlic until fragrant. Add potato cubes and sauté little bit more. Cancel the saute. Add fresh broccoli florets and chicken stock or vegetable broth.

4. Stir all ingredients and secure the lid.

5. Set the cooking time on high select the pressure cook button for 8 minutes. Then use the quick release to let the steam escape.

6. Use your immersion blender to blend the potato, onion, broccoli, and broth until smooth.

7. Optional toppings include some green onion and red pepper for a more flavorful soup. Season with salt and black pepper to taste! Add your own shredded cheese, grated cheese, or hot sauce on top if desired! Serve in a regular bowl and make some garlic toast to also go with it! You can also make a double recipe, and take the leftover soup and place it into freezer bags for a future meal! It’s a great way to make 2 meals at one time!
