If that didn't sell you already, let me remind you that quinoa is easy to access (sold at pretty much any grocery store) and it's so easy to make. Nobody will believe you that you made this flavorful quinoa dish in one pot by dumping all the ingredients in. Save the leftovers (if there are any) and use as meal prep for the week! It really doesn't get easier than this.

Ingredients

  • 1 cup quinoa, rinsed
  • 1 cup veggie or chicken broth 
  • 1 can diced fire roasted tomatoes
  • 1 can corn
  • 1 can black beans, drained & rinsed
  • chopped cilantro
  • juice of 1 lime
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • salt
Instructions

Add everything besides the lime & cilantro into a large pan.
Bring it to a boil.
Cover and let simmer for 30-40 min or until the quinoa is cooked through.
Add the juice of the lime and cilantro.
