Reasons to eat more quinoa:

1) it's rich in antioxidants

2) it's higher in fiber than many other grains

3) it's a good source of vitamins & minerals

4) it's high in protein & fiber

5) it's gluten free!

If that didn't sell you already, let me remind you that quinoa is easy to access (sold at pretty much any grocery store) and it's so easy to make. Nobody will believe you that you made this flavorful quinoa dish in one pot by dumping all the ingredients in. Save the leftovers (if there are any) and use as meal prep for the week! It really doesn't get easier than this.
